How to make it

  • Mix raisins, mixed peel, caster sugar and mixed spice.
  • Add water and butter. Bring to boil and cool for about ½ an hour.
  • Sift flour and bi-carb.
  • Add fruit and mix.
  • Add chopped walnuts.
  • Pour into tin
  • Bake at 170C for 1 hour. Allow up to an extra 20 minutes
  • Icing
  • Mix 1 cup icing sugar with orange juice. Pour over cake
