My husband likes a hearty chili with some cornbread. I have to watch what I use due to my diet. When I told him that it was low carb he freaked, and didnt think it was going to taste the same. He ate it and said He didn't notice a differance.

changed it up some. eliminated mushrooms, instead of green/bell peppers I used jalapenos, sweet peppers and habaneros; minced that together w/ the onion.
I also added curry, and dry mustard (I approximate on my spices, but ~ 1 tsp each).
Also adding Kidney beans (1.5 cups)
it's still low carb and a LOT of Fiber.
Added the spices and Worcestershire while browning the meat, then added water and tomato paste. and added the beans 1 hour into simmer (the time it takes to quick cook/soak the beans..

You can use beef broth instead of water. My basic lo carb chile is the same as yours but I use beef broth. It has zero carbs and makes the chile much more flavorfull.
