How to make it

  • Mix the veg and coriander well
  • add enough water to the dry mix so that it is a very stiff paste
  • Add the veg...It will feel really claggy but as you work it it will loosen slightly. ( if you can drop it off the spoon, its too soft)
  • DONT MIX VEG AND DRY TOGETHER TILL YOU NEED THEM COS THE ONIONS WILL WEEP AND MAKE THE MIX SOGGY
  • Sorry for shouting, but thats important :)
  • Deep fry at 180. use 2 teaspoons to drop small amounts of the mix in the oil and dont make them too fat...
  • To serve...Open a bottle of Linghams ginger and garlic sauce. Pour in a bowl to dip. (My favourite)

    Garam masala is so different in all the regions o India. I've hooked onto the one at my local asian supermarket. It gives a good kick at the end of cooking many dishes, along with, as you say, the flavour and aroma. Ps chef irish. Are u indeed From across the water?
