ASPARAGUS AND HAM TOPPED POTATOES

- 4 lg. russet potatoes, baked shopping list
- 1/2 lb. ham, cut in julienne strips shopping list
- 2 c. hot cooked asparagus shopping list
- 2 hard boiled eggs, sliced shopping list
- toasted sliced almonds (optional) shopping list
- ________________________________ shopping list
- Slit hot potatoes lengthwise and open by gently squeezing from the bottom. Top hot potatoes with ham, asparagus and sliced eggs. Spoon sauce over top and garnish with almonds. shopping list
- CREAMY mustard SAUCE: shopping list
- 2 tbsp. butter shopping list
- 3 tbsp. flour shopping list
- 1 tsp. dry mustard shopping list
- 1/2 tsp. salt shopping list
- 1/8 tsp. white pepper shopping list
- 2 c. milk shopping list
How to make it
- Bake potatoes as you normally would and ham and asparagus as directed on package
- boil eggs
- Melt butter in saucepan and stir in flour, mustard and salt and pepper. Mix thoroughly. Gradually stir in milk. Cook and stir until thickened and bubbly. makes 2 cups
