Nettle and Sunchoke Soup

- 3 sunchokes, cut into 1/4 in pieces shopping list
- 3 tbls butter shopping list
- 1 green garlic, washed and cut into 1/4 in pieces shopping list
- 1 small onion diced, or chives shopping list
- 3 1/4 c vegetable or chicken stock shopping list
- 1/2 bunch nettle leaves, wash thoroughly and remove stems shopping list
- 2 c 1% milk shopping list
- salt and pepper to taste shopping list
- dollops of plain yougurt shopping list
- fresh lemon juice shopping list
How to make it
- Melt butter in medium pot over medium heat.
- Add garlic and onion.
- Sweat for about 4 minutes
- Add stock and simmer until sunchokes are soft, about 40 minutes.
- Add the nettle leaves and simmer for 5 minutes.
- Take off the heat and add the milk.
- Blend until smooth.
- Return to heat and bring to simmer.
- Season with salt and pepper.
- Garnish with chopped chives, dollop of plain yougurt and squirt of lemon juice.
