How to make it

  • Melt butter in medium pot over medium heat.
  • Add garlic and onion.
  • Sweat for about 4 minutes
  • Add stock and simmer until sunchokes are soft, about 40 minutes.
  • Add the nettle leaves and simmer for 5 minutes.
  • Take off the heat and add the milk.
  • Blend until smooth.
  • Return to heat and bring to simmer.
  • Season with salt and pepper.
  • Garnish with chopped chives, dollop of plain yougurt and squirt of lemon juice.
