How to make it

  • Wash and Peel the Potatoes and Parsnip then chop into large chunks and place into a pot of cold water and bring to the boil
  • Rip the Kale in to pieces and steam over the potatoes in a colander
  • When the Potatoes and Parsnip are soft to the tip of a sharp knife, drain and mash together adding the butter and milk and bring to a fluffy consistency
  • Drain the Wilted Kale and place on a chopping block
  • Chop in to small pieces
  • Dice the Onion finely
  • add the Chopped Kale and Diced oinon to the mash and mix together
  • Season with Salt and Pepper
  • Serve Hot with a knob of butter
  • Yum!
