How to make it

  • Preheat oven to 325 degrees. Lightly grease12 muffin cups or line with paper liners.
  • In a large mixing bowl, cream together butter and sugar. Add eggs and vanilla; beat well. Stir in peanut butter, bananas, flour and baking soda until blended. Fold in chocolate chips. Spoon batter into muffin cups.
  • Bake at 325 degrees for 25-30 minutes or until a toothpick inserted into center of muffins comes out clean.

    These are exactly like another recipe I've made, except it calls for 1/2 cup of peanut butter and 1/4 cup of sour cream. So that's how I made them today. I think the sour cream helps lighten it up as the peanut butter can be very heavy. I also baked them at 375 for 20 minutes, I like them with a little crust on the top-- yummy!
    (Oh, btw, I use natural peanut butter with no sugar added)
