CHICKEN - Chinese Style portions

                    - 2 Large Chickens shopping list

 - I used this to help me out on how to chop up a chook. shopping list
 - I now do the breast and other portions very well. shopping list
 
How to make it 
                    - With the bird on it's back, place cleaver to one side of breast bone and cut thru for two halves.
 - Cut out the leg from carcase and breast. Find the joint of drumstick on leg and cut thru.
 - Remove breast from carcase.
 - Cook carcase in water, strain (keep carcase) and allow water to cool.
 - Place in fridge (covered) overnight.
 - Remove fat from the top of Chicken Stock next day and discard fat. Keep stock
 - Remove meat from carcase and save for Chicken & Corn Soup
 - I use the Chicken Stock for making Chicken & Corn Soup - 6 to 8 serves
 - Then, I use one Chicken breast cut into pieces to use as stir fry - 2 serves
 - Then the same again for the other three breasts - 6 serves
 - I then use the legs for Cacciatore - 4 serves
 - I then use the drum stick and wing with a thick Chinese sauce, basted in the oven - 4 serves
 - All these (22 meals) out of two big chooks, but you must accompany these with vegetables or rice or both, to fill you up.
 - I would be looking at AUD$13.00 for the 2 chooks and about $15.00 max. for vegetables.
 - So now we have 22 meals for AUD$28.00 and roughly the same in US $dollars, equating to about $1.30 per serve. Plus the Electricity or Gas.
