How to make it

  • Wash spinach and cut into small peices.
  • Cut the Tofu into 1/4" squares.
  • Bring stock to a roiling boil, and add tofu and soy. Return to boil and let simmer for 2 minutes.
  • Add spinach and let simmer 1 minute.
  • Skim soup until clear to season the broth, then return the spinach and tofu.
  • Serve immediately.
