Spinach And Tofu Soup

- 4 Ounces Tofu shopping list
- 4 Ounces Spinach Leaves shopping list
- 3 Cups Vegetable Stock shopping list
- 1 Tablespoon Light Soy Sauce shopping list
- Salt & Pepper to taste shopping list
How to make it
- Wash spinach and cut into small peices.
- Cut the Tofu into 1/4" squares.
- Bring stock to a roiling boil, and add tofu and soy. Return to boil and let simmer for 2 minutes.
- Add spinach and let simmer 1 minute.
- Skim soup until clear to season the broth, then return the spinach and tofu.
- Serve immediately.
