How to make it

  • Cook barley per instructions on bag
  • Let cool for about 10 minutes
  • Add olive oil and juice of lemon to barley
  • Stir together
  • Add the tomatoes, onions, mint, cucumbers and parsley
  • Stir together until mixed thoroughly.
  • Let stand in refrigerator for about one hour until cold.
  • Serve.
