Basalmic Chicken With Roasted Grape Tomatoes

- 1 Pint of Grape Tomatoes shopping list
- 1 Tablespoon of Honey shopping list
- 1.5 Teaspoon of Olive Oil shopping list
- 0.5 Teaspoon of Salt (divided) shopping list
- 4 Skinless Boneless Chicken Breast Halves shopping list
- 0.5 Teaspoon of Pepper shopping list
- Cooking Spray shopping list
- Balsamic Vinegar or Balsamic Vinegar Spray (for salads) shopping list
How to make it
- Preheat oven to 450 degrees
- Mix tomatoes with honey and olive oil in a bowl
- Lay tomatoes out on a foil covered jelly roll pan (I didn't have a jelly roll pan so I took foil and made a little fake-pan and placed it all on a baking sheet. Worked just as well)
- Put tomatoes in oven and cook for about 12 minutes until tomato skins are wrinkly
- Remove tomatoes and put into a bowl with all of the juices. Add a 1/4 teaspoon of salt to the mixture
- Place chicken breasts between plastic wrap and pound to 1/4 inch thick with a meat tenderizer or small saucer
- Sprinkle chicken evenly with 1/4 teaspoon of salt and pepper
- Heat skillet at medium high heat and spray with cooking oil
- Add chicken and cook approx. 3-4 minutes on either side
- Once chicken is cooked, place on plates. Coat with balsamic and cover with tomatoes and juices
