How to make it

  • Preheat oven to 450 degrees
  • Mix tomatoes with honey and olive oil in a bowl
  • Lay tomatoes out on a foil covered jelly roll pan (I didn't have a jelly roll pan so I took foil and made a little fake-pan and placed it all on a baking sheet. Worked just as well)
  • Put tomatoes in oven and cook for about 12 minutes until tomato skins are wrinkly
  • Remove tomatoes and put into a bowl with all of the juices. Add a 1/4 teaspoon of salt to the mixture
  • Place chicken breasts between plastic wrap and pound to 1/4 inch thick with a meat tenderizer or small saucer
  • Sprinkle chicken evenly with 1/4 teaspoon of salt and pepper
  • Heat skillet at medium high heat and spray with cooking oil
  • Add chicken and cook approx. 3-4 minutes on either side
  • Once chicken is cooked, place on plates. Coat with balsamic and cover with tomatoes and juices
