Asparagus And Red Potato Salad

- 3 cups asparagus cut into 2" pieces, steamed shopping list
- about 15 small red skin potatoes, boiled shopping list
- 1 can artichoke hearts, drained shopping list
- 1/3 cup blue cheese (more or less to taste) shopping list
- Good Season's Garlic and herb freshly prepared dressing shopping list
- dressing prepared with good olive oil and red wine vinegar shopping list
- chopped fresh flat leaf parsley and chives shopping list
- fresh ground pepper shopping list
How to make it
- cut asparagus and steam to desired tenderness, I do 3 minutes
- plunge into ice bath to stop cooking
- boil potatoes and set aside to cool
- drain canned artichokes
- chop parsley and chives
- crumble blue cheese
- When potatoes have cooled drain asparagus, cut potatoes in 1/2
- put all above ingredients into salad bowl
- prepare salad dressing
- add desired amount of dressing and pepper to salad and mix well
