Capellini With Lemon And Garlic

- * 1 pound capellini or other thin spaghetti, preferably whole wheat shopping list
- * 1/4 cup olive oil shopping list
- * 3-4 tablespoons minced garlic shopping list
- * Salt and pepper to taste shopping list
- * Juice and zest of 1 lemon shopping list
- * 3 tablespoons chopped fresh parsley shopping list
- * Freshly grated Parmesan cheese shopping list
How to make it
- Cook the pasta according to package directions for al dente.
- Drain, reserving some of the water..
- Add the oil and garlic to pot and sauté about 1 minute.
- Return the pasta to the pot and toss.
- Add salt, pepper, lemon juice, zest, parsley and enough reserved water to moisten.
- Toss again.
- Serve, passing the cheese separately.

- Note: This pasta can be made up to an hour ahead, set aside at room temperature, and reheated in microwave.
