Whitefish With Lemon Vinaigrette

- 6 whitefish fillets shopping list
- All purpose flour, for dredging shopping list
- 3 Tbs. extra-virgin olive oil shopping list
- Lemon Vinaigrette: shopping list
- 1/4 C. fresh lemon juice shopping list
- 1/4 C. lightly packed fresh Italian parsley leaves shopping list
- 2+ cloes of garlic shopping list
- 2 tsp. finely grated lemon zest shopping list
- 1/2 tsp. salt shopping list
- 1/4 tsp. ground pepper shopping list
- 1/3 C. extra-virgin olive oil shopping list
How to make it
- Lemon Vinaigrette:
- Blend the lemon juice, parsley, garlic, lemon zest, salt, and pepper in a blender. With the machine running, gradually blend in the oil. Season the vinaigreete, to taste, with more salt and pepper.
- Fish:
- Heat 3 Tbs. olive oil in a large nonstick frying pan over medium high heat. Salt and pepper the fillets. Dredge the fillets in flour to coat completely and shake off the excess flour. Fry the fillets until they are golden brown and just cooked through, about 3 minutes per side.
- Drizzle the vinaigrette over the fillets and serve immediately.
