Mom's Potato Salad

I grew up with this potato salad. This salad has a bite, which my family and I prefer over the sweet-style potato salads most everyone else I know makes.
Ingredients
- 1 Lg. onion diced shopping list
- 8-10 potatoes cooked until tender and chopped while hot shopping list
- 8-10 hard boiled eggs chopped shopping list
- Celery or celery seed shopping list
- **Combine above ingredients** shopping list
- Dressing: shopping list
- 2+ C. real mayonnaise shopping list
- 2-3 Tbs. vinegar shopping list
- 2-3 Tbs. dry mustard shopping list
- 2-3 Tbs. yellow mustard shopping list
- Season Salt (liberal) shopping list
- 3+ Tbs. horseradish shopping list
- Salt shopping list
- Pepper shopping list
How to make it
- Mix at least 1 hour before adding to the above, taste changes as it sets. Combine dressing with potato mixture and fold together right after you cut the potatoes so they are still hot, (the potatoes absorb the flabor better). If possible make the day before and check flabor, add salt if necessary.
