How to make it

  • Melt the butter in a small saucepan. Add onions and sauté on a med/high heat until soft and yellow.
  • Stir in the apples, whole grain mustard, stock. Bring all to a boil. Turn down the heat & simmer for 5 mins.
  • Slowly add the rice flour into the 1/2 cup cold water and stir until blended.
  • Add the cold creamy rice mix to the hot soup mix - bring to the boil then simmer for 1 - 2 minutes, stirring the whole time.
  • Add the soy sour cream last - Serve then fold the cream into the soup. Enjoy
