Apples And Ba Nay Nays Muffins

- 1 cup soy or rice milk shopping list
- 1/4 cup vanilla soy yogurt shopping list
- 1 over-ripe banana, mashed well shopping list
- 1 tsp. lemon juice shopping list
- 2 cups unsweetened, thick applesauce shopping list
- 3 tbsp. canola oil shopping list
- 3 tbsp. maple syrup shopping list
- 1/2 cup brown sugar shopping list
- 1/3 cup sugar shopping list
- 2 cups whole wheat flour shopping list
- 1 cup AP flour shopping list
- 1/2 cup wheat bran shopping list
- 1/2 cup rolled oats shopping list
- 1/2 cup ground almonds shopping list
- 4 tsp. baking powder shopping list
- 1 tsp. baking soda shopping list
- 1/2 tbsp. cinnamon shopping list
- 1 tsp. nutmeg shopping list
- 1/2 tsp. salt shopping list
- 2 medium apples, diced shopping list
How to make it
- Preheat oven to 350 F, and grease 24 regular or 12 jumbo muffin cups (or 12 muffin cups and 1 loaf pan).
- Mix soy milk, soy yogurt, banana and lemon juice.
- Add applesauce, canola oil, maple syrup and sugars.
- Mix dry ingredients in a separate bowl, and add to the wet mixture.
- Mix until just combined.
- Bake standard muffins for 20 minutes, jumbos 35 minutes and a loaf 45 minutes (will test clean).
