How to make it

  • Preheat the oven to 300 degrees F. Line two baking sheets with parchment paper.
  • Beat egg whites until stiff but not dry. Fold in cornstarch.
  • Transfer egg and cornstarch mixture to a double boiler and set to a low heat. Stir in the sugar and cook for three to four minutes or until mixture pulls away from pan.
  • Remove from heat and stir in vanilla and then the coconut.
  • Drop by spoonfuls 1 1/2 inches apart on lined baking sheets.
  • Bake for 20 to 25 minutes or until golden brown and firm to the touch.
  • Cool and serve.
