Thai-style Orange & Sweet-chili Salmon

- Salmon fillet ( lets say, half a fish?) shopping list
- 1 yellow Onion in long strips shopping list
- Fresh Basil shopping list
- 1/2 bottle Mae Ploy (or whatever brand) Sweet-Chili sauce shopping list
- Juice of 3-4 Oranges shopping list
- Juice of 3 Limes shopping list
- minced Garlic ( don't need that much) shopping list
- Fresh ginger, thinly sliced or grated shopping list
- 1-2 table spoons Sambal Olek/ Vietnamese red-chili hot sauce shopping list
- salt and pepper shopping list
- Serve with Jasmine rice. shopping list
- and a little fresh mint to garnish shopping list
How to make it
- Set your rice!
- Sometimes I divide the fillet into equal portions. in either case, combine your salmon with the ingredients above mentioned into a proportional mixing bowl. mix it up! You basically want enough sweet-chili and orange juice to cover the fish and onions, but you don't want it to be over saucy. set aside and let marinade for 30-45 minutes.
- pre-heat oven to 250. you'll want to move the Salmon and marinade onto a foil covered baking sheet, and bake for about 20 minutes. I forget it's been a while. you want the salmon to be flaky and moist. ;P This is a beloved dish.
- serve with steamed rice and a vegetable. I usually combine this with a fried green-bean recipe i'll add next.
