Meatballs In Tomato Sauce Recipe

Ingredients
  • 500 g/l Ib 2 oz minced pork
  • 75 g/3 oz fresh breadcrumbs
  • 1 egg
  • 2 tablespoons tomato puree
  • 1/2 teaspoon dried oregano
  • salt and black pepper
  • For the tomato sauce
  • 1 clove garlic
  • 1 onion
  • 2 tablespoons olive oil
  • 2 x 400 g/l4 oz cans chopped tomatoes
  • 1/2 teaspoon dried oregano
  • chopped fresh oregano, to garnish (optional)

Directions
  1. Put the pork, breadcrumbs, egg, tomato puree and dried oregano in a large mixing bowl. Season well. Mix together until well combined. Using your fingers, shape the mixture into 12 balls. Chill for 30 minutes.
  2. For the sauce, peel and chop garlic and onion. Heat the oil in a large frying pan. Fry the meatballs for 4-5 minutes, or until browned.
  3. Remove meatballs from the pan. Add the garlic and onion to the pan. Fry gently over a low heat for 3-4 minutes, or until softened.
  4. Add tomatoes and dried oregano and bring to boil. Return meatballs to the pan and simmer for 30 minutes, turning occasionally. Serve garnished with fresh oregano, if using.
