Meatballs in tomato sauce

- 500 g/l Ib 2 oz minced pork shopping list
- 75 g/3 oz fresh breadcrumbs shopping list
- 1 egg shopping list
- 2 tablespoons tomato puree shopping list
- 1/2 teaspoon dried oregano shopping list
- salt and black pepper shopping list
- For the tomato sauce shopping list
- 1 clove garlic shopping list
- 1 onion shopping list
- 2 tablespoons olive oil shopping list
- 2 x 400 g/l4 oz cans chopped tomatoes shopping list
- 1/2 teaspoon dried oregano shopping list
- chopped fresh oregano, to garnish (optional) shopping list
How to make it
- Put the pork, breadcrumbs, egg, tomato puree and dried oregano in a large mixing bowl. Season well. Mix together until well combined. Using your fingers, shape the mixture into 12 balls. Chill for 30 minutes.
- For the sauce, peel and chop garlic and onion. Heat the oil in a large frying pan. Fry the meatballs for 4-5 minutes, or until browned.
- Remove meatballs from the pan. Add the garlic and onion to the pan. Fry gently over a low heat for 3-4 minutes, or until softened.
- Add tomatoes and dried oregano and bring to boil. Return meatballs to the pan and simmer for 30 minutes, turning occasionally. Serve garnished with fresh oregano, if using.
