How to make it

  • Start off by cutting the cabbage up into small bite sized pieces and toss in a bowl with the diced apple
  • Now start to make the dressing
  • Add the safflower oil and vinegar together and mix well with whisk
  • Add the sesame oil
  • Add 4 tablespoons of the the maple syrup
  • This is where your tastebuds come into play. You are looking for a good balance between the nuttiness of the sesame oil and the sweetness of the syrup. The sesame oil is a very strong flavor, and maple syrup with differ based on the region it comes from. So you may have to add more syrup.
  • Once you have made the dressing to your liking, add about 2/3's of it to your cabbage/ apple mixture and give it a good mix
  • Now if you have not washed your cilantro yet....wash it now. Remember you are only using the leaves in this recipe....no stems
  • Add the cilantro to the cabbage and apple...mix well
  • If you havent washed the spinach do it now....then add to the top of the salad mixture but dont mix in yet
  • Drizzle the remaining 1/3 of the dressing to the spinach. Let sit for about 2-3 mins then mix all together.
  • Sprinkle the pumpkin seeds on top...you are done
  • A big bowl is best for putting this together.
