How to make it

  • Saute onions and garlic in pan until glassy, then add meat or tofu, and bouillon.
  • Add sliced mushrooms (optional)
  • Cook until meat is done, or until liquid has evaporated from tofu - tofu takes longer
  • While meat is cooking, process peppers in food grinder (processor would work too)
  • Pour peppers, tomato sauce and beans into a large pot
  • Add chili powder, pepper and meat to bean mixture or to meat
  • If you like your chili spicy, add cayenne - be careful - very little goes a long way!
  • Simmer for 30 minutes at least - the longer, the tastier.
  • You can adjust almost all the ingredient amounts in this recipe, mine is never exactly the same twice. I sometimes add celery, also processed in the food grinder
