Potato, Yam, Bacon & Rosemary Tart

- 6 small to medium potatoes (about 2 lbs) shopping list
- 1 small yam about the same diameter as the potatoes and about 8 inches long shopping list
- 1/2 pack your favorite bacon shopping list
- 3-4 Tbsp rosemary chopped fine (you can freeze the leftover) shopping list
- 1/4 cup butter cubed small shopping list
- salt and pepper to taste shopping list
- parchment paper shopping list
- 9x9 bake sheet shopping list
How to make it
- Preheat oven to 400f
- 1. Cut parchment paper and line bottom of pan
- 2. Cut butter into small slices then cubes and place on bottom of pan sporadically.
- 3. Sprinkle a little Rosemary and salt pepper on bottom.
- 4. Peel potatoes and yams and cut into slices about 1/8 inch thick.
- 5. Place one layer of potatoes nicely on bottom of pan, sprinkle with butter, rosemary, bacon and S+P add another layer of potatoes butter and seasoning, bacon follow this with 2 layers of yams and seasoning and then 2 more or whatever you have left of potatoes top with the last of the butter and seasonings.
- 6. Place parchment paper on top of this and press down.
- 7. Place in a 400f over for one hour or until tender.
- 8. Allow to cool 5 minutes before slicing
- (you don't have to use all the butter, the fat from the bacon will help out nicely, )
