Layered Shrimp Salad

- 12 oz chilled cooked shrimp shopping list
- 2 fresh jalapenos,seeded,ribbed,and finely chopped,divided shopping list
- 6 tsp lemon flavored olive oil,divided shopping list
- kosher salt and fresh cracked black pepper shopping list
- 4 med. vine-ripened tomatoes,seeded and diced shopping list
- 1 to 2 avocados,peeled,pitted,and diced shopping list
- chopped chives,for garnish shopping list
How to make it
- Purt shrimp in small bowl and add 1/2 jalapenos,2 tsp lemon oil and salt and pepper,to taste,and toss to combine. In second bowl,mix tomatoes with 2 tsp oil and salt and pepper to taste. Put the diced avocado in a third bowl;add remaining 2 tsp lemon oil,1/2 jalapenoremaining,salt and pepper to taste,toss well.
- To assemble,divie 3/4 of shrimp among 4 short 6 oz. wide rimmed glasses. Top shrimp in each glass with 1/4 of the tomatoes,followed by 1/4 of the avocado. Finely chop remaining shrimp to garnish each glass and sprinkle the chives evenly over each salad. Alternately,you can layer this in a large trifle bowl,to share. Serve immediately or chill and serve within 1 hour.
- Turn into a dip by simply adding chips. Can substitute shrimp for crab.
