- 3 lb pork cut into 1'x1'x1.5" pieces. I use pork loin or pork shoulder roast shopping list
- 2 lemons - juice and pulp (at least 1/2 c total) shopping list
- 4 cloves garlic, minced shopping list
- 2 T fresh thyme, chopped (2 teas dried thyme) shopping list
- 1 T dried oregano shopping list
- 1 T kosher salt shopping list
- 1 T cracked black pepper shopping list
- 1/2 c olive oil shopping list
- 16 bamboo skewers soaked in water shopping list
- 2 lemons cut into 8 pieces each for serving shopping list
How to make it
- Combine the lemon juice and pulp, olive oil, salt , garlic, pepper, and herbs in a gallon baggie or non reactive bowl.
- Add the meat, mixing well and refrigerate for 90 minutes.
- Skewer the meat on the bamboo skewers.
- Grill until done, turning often (alternate cooking method - use a roasting pan and slant the skewers from the edge to the middle of the pan. Roast at 400 F for 35-40 minutes)
- Serve with lemon slices.
