How to make it

  • Heat olive oil in a saucepan over medium heat.
  • Add onions and cook until translucent, don’t allow them to brown.
  • Stir in beet and soy sauce, cook 1 minute longer.
  • Add the Craisins, red wine and bourbon. Increase heat and allow to reduce by half (this takes about 5 minutes depending on your pot size).
  • Stir in blueberries and chocolate, cook until blueberries begin to pop (about 3 minutes)
  • Gently mash 1/2 of the berries with a fork and cook to desired texture.
