How to make it

  • Preheat oven to 350F.
  • Assemble cake mix as directed on package.
  • Mix in bowl with wire whisk until smooth. (Note that any whipping with your beater or other such directions are not necessary - the package directed me to do so, and I ignored it - it turned out just fine. YMMV (your mileage may vary, of course)
  • In separate bowl, mix graham cracker crumbs, brown sugar and add 1/4 cup of the melted butter until coarse (and yummy) graham crumbles are formed.
  • Spread a thin layer of graham cracker crumbles in each of your cupcakes (I put a "dab" in each liner) very loosely covering the bottom of each liner/cup.
  • Put a tablespoon or so of batter in each cup on top of graham layer.
  • Sprinkle some more graham mixture on top of that layer.
  • Put 3 marshmallows and 1/2 a caramel in the centre of each cupcake (actually, the ones in the picture didn't have caramel - and they were still yummy).
  • Use the rest of the cake batter to fill the cups to about 3/4 full. If you have leftover batter, make some extra plain chocolate cupcakes while you're at it. Dessert for lunch... mmmm.
  • Sprinkle the rest of the crumb mixture on top.
  • Bake for about 15 minutes.
  • Place a cookie sheet underneath pan just in case (just a good idea).
  • Remove from oven and let cool on wire racks. Remove them from pan (the next step is a little messy if you try to do it in the pan).
  • Heat the butter and cream together on the stove. Heat until just before it boils. Remove and pour in chocolate chips. Stir until completely melted and smooth.
  • Nestle another marshmallow or two on top of cupcakes.
  • Pour some ganache on top letting the marshmallows peak through.
  • Let the chocolate lovers goop more of the ganache over everything.
  • Mmmmm.
