How to make it

  • Line a 20 cm cake tin and pre-heat oven to 180 celcius.
  • Beat oil and sugar with a wooden spoon.
  • Add eggs and carrot and mix well.
  • Fold in dry ingredients, nuts & seeds.
  • Spoon into the cake tin and bake for 1 hour.
  • Icing:
  • Mix the cream cheese, icing sugar and lemon rind.
  • When the cake is cool, top with the icing & sprinkle with toasted muesli.
  • Instead of toasted muesli I used a mixture of crushed walnuts, chopped apricots & roughly chopped pumpkin seeds.
