Fat Dog Carrot Cake

- 1 Cup sunflower oil shopping list
- 1 1/2 Cups brown sugar shopping list
- 3 eggs, beaten shopping list
- 2 Cups carrot, grated shopping list
- 1 3/4 Cups flour shopping list
- 1/2 Teaspoon salt shopping list
- 1 Teaspoon baking soda shopping list
- 1 Teaspoon baking powder shopping list
- 1 Teaspoon cinnamon shopping list
- 1 Cup walnuts shopping list
- 1/4 Cup sunflower seeds shopping list
- Icing: shopping list
- 250g Carton cream cheese shopping list
- 1/4 Cup icing sugar, sifted shopping list
- 1 Teaspoon lemon rind, finely grated shopping list
- 1/2 Cup toasted Muesli shopping list
How to make it
- Line a 20 cm cake tin and pre-heat oven to 180 celcius.
- Beat oil and sugar with a wooden spoon.
- Add eggs and carrot and mix well.
- Fold in dry ingredients, nuts & seeds.
- Spoon into the cake tin and bake for 1 hour.
- Icing:
- Mix the cream cheese, icing sugar and lemon rind.
- When the cake is cool, top with the icing & sprinkle with toasted muesli.
- Instead of toasted muesli I used a mixture of crushed walnuts, chopped apricots & roughly chopped pumpkin seeds.
