Sweet Lentil-pumpkin Pudding

- 1/4 cup raw red lentils shopping list
- 2/3 cup rice milk shopping list
- 1/4 tsp cinnamon shopping list
- 1 cup well-cooked short-grain rice shopping list
- 1 large, over-ripe banana, broken into chunks shopping list
- 1/3 cup pure pumpkin puree shopping list
How to make it
- Combine lentils, milk and cinnamon in a saucepan over medium heat and bring to a simmer.
- Cook, stirring occasionally, for 15 minutes.
- Stir in rice and cook a further 10 minutes.
- Remove from heat and transfer to a blender.
- Add banana and pumpkin puree and process until very smooth.
