Rainbow Pasta

- 1pkg tri-colored pasta shopping list
- 2 16oz cans Italian style tomatoes (whole or chopped), only 1 can drained shopping list
- 1 clove garlic, minced shopping list
- 1/2 an onion, chopped (brown or white) shopping list
- 1c sliced mushrooms shopping list
- 1 1/2c grated mozzarella cheese shopping list
- olive oil shopping list
- salt (optional) shopping list
How to make it
- Cook pasta in boiling salted water w/ a little olive oil. Drain, rinse & set aside.
- In large skillet over med-high, brown onion & garlic in 2Tbsp olive oil until onion is see thru & carmelized, 7-8min.
- Add tomatoes to skillet along w tomato juice from undrained can. If tomatoes are whole, break them up with wooden spatula (or whatever you're using to stir with).
- Add muchrooms & simmer on med-high 5-10min. Remove from heat.
- Toss tomato mixture in with the pasta.
- Add the grated mozzarella.
- Serve w garlic bread & a crispy green salad.
