How to make it

  • Cook pasta in boiling salted water w/ a little olive oil. Drain, rinse & set aside.
  • In large skillet over med-high, brown onion & garlic in 2Tbsp olive oil until onion is see thru & carmelized, 7-8min.
  • Add tomatoes to skillet along w tomato juice from undrained can. If tomatoes are whole, break them up with wooden spatula (or whatever you're using to stir with).
  • Add muchrooms & simmer on med-high 5-10min. Remove from heat.
  • Toss tomato mixture in with the pasta.
  • Add the grated mozzarella.
  • Serve w garlic bread & a crispy green salad.
