Spicy Eggplant And Caramelized Onion Vegan Panini

- 4 ciabatta buns shopping list
- 1/2 Cup Spicy Marinated eggplant (I use the jarred kind) shopping list
- caramelized onions (Recipe to follow) shopping list
- 1 Ripe avocado sliced shopping list
- 6 "Bacon" strips (Optional, but I like the Yves brand) shopping list
- salt and pepper shopping list
- olive oil for frying shopping list
- 4 Tbsp Vegenaise shopping list
- caramelized onions shopping list
- 1 Large red onion shopping list
- 1/4 Cup balsamic vinegar shopping list
- 2 tsp sugar shopping list
- salt and pepper shopping list
- olive oil for frying shopping list
- 1 Tbls Vegan butter shopping list
How to make it
- Slice the Red Onion thin
- Place the Vegan butter and approximately 1 tbls of Oil into a pan.
- When the Oil is hot, add the Red Onion and salt and pepper to taste
- Sautee the Onion until tender (approx. 10 mins) add the Balsamic Vinegar and Sugar. Sautee for another 5 mins or so
- When the Onions are done, remove from pan and set aside
- Add the Eggplant to the same pan as the onions. Sautee until they are warmed through. Remove from Pan and place to the side.
- Add the "Bacon" to the pan and sautee until fried up. Once cooked, remove and set to the side.
- Add a little more oil to the pan and set the temperature to Med-High.
- Assemble your paninis by adding a little bit of the Onion, Eggplant, "Bacon", Avocado and 1 tbl of Vegenaise to each Ciabiatta bun.
- Place in the Hot oil. Take a second pan and push down on top of the sandwiches. Flip the sandwiches after about 3 mins of frying.
