How to make it

  • Slice the Red Onion thin
  • Place the Vegan butter and approximately 1 tbls of Oil into a pan.
  • When the Oil is hot, add the Red Onion and salt and pepper to taste
  • Sautee the Onion until tender (approx. 10 mins) add the Balsamic Vinegar and Sugar. Sautee for another 5 mins or so
  • When the Onions are done, remove from pan and set aside
  • Add the Eggplant to the same pan as the onions. Sautee until they are warmed through. Remove from Pan and place to the side.
  • Add the "Bacon" to the pan and sautee until fried up. Once cooked, remove and set to the side.
  • Add a little more oil to the pan and set the temperature to Med-High.
  • Assemble your paninis by adding a little bit of the Onion, Eggplant, "Bacon", Avocado and 1 tbl of Vegenaise to each Ciabiatta bun.
  • Place in the Hot oil. Take a second pan and push down on top of the sandwiches. Flip the sandwiches after about 3 mins of frying.
  • Enjoy!
