How to make it

  • Heat oven to 350
  • Peel the beets, place on foil, spray with oil, salt lightly. Wrap tightly and roast for about 45 minutes, until fork tender.
  • While the beets are roasting, make the dressing:
  • Place the goat cheese in a bowl, mash with a fork
  • Add buttermilk and vinegar, whisk together
  • Whisk in enough oil and water to bring to the consistency of a thick dressing
  • Add salt and pepper to taste
  • Remove beets from oven, slice about 1/4" thick
  • Arrange lettuce on a platter, place beet slices on top, sprinkle pistachios over and drizzle with dressing
  • Serve and enjoy!
