Fancy Nisher's Roasted Beet Salad With Goat Cheese Dressing And Pistachios

- 4 ounces fresh goat cheese - set out at room temperature to soften shopping list
- 1/3 cup buttermilk shopping list
- juice of 1/2 lemon shopping list
- 1 tablespoon champagne vinegar shopping list
- 2 tablespoons flavorful olive oil shopping list
- 2 tablespoons water shopping list
- Pure spray oil - olive or whatever shopping list
- 8 medium beets - red and golden, if available shopping list
- 2 heads bibb lettuce (coarsely torn) shopping list
- 1/2 cup pistachios shopping list
- salt and pepper to taste shopping list
How to make it
- Heat oven to 350
- Peel the beets, place on foil, spray with oil, salt lightly. Wrap tightly and roast for about 45 minutes, until fork tender.
- While the beets are roasting, make the dressing:
- Place the goat cheese in a bowl, mash with a fork
- Add buttermilk and vinegar, whisk together
- Whisk in enough oil and water to bring to the consistency of a thick dressing
- Add salt and pepper to taste
- Remove beets from oven, slice about 1/4" thick
- Arrange lettuce on a platter, place beet slices on top, sprinkle pistachios over and drizzle with dressing
- Serve and enjoy!
