Veggie Pasta Sauce Recipe
This is a meatless pasta sauce that surprises many with its flavor and heartiness. Can be served on pasta or rice.

Ingredients
  • 2 cans diced tomatoes
  • 1 small can tomato paste
  • 3 shallots or 1 medium yellow onion, finely chopped
  • 1 cup diced white mushrooms
  • 1 chopped sweet pepper
  • 1/2 cup frozen spinach (or 1 cup fresh)
  • 1/2 cup chopped carrots
  • 1 diced small zucchini
  • 2 tbsp garlic powder
  • 2 tbsp basil
  • 2 tsp oregano
  • dash of ground pepper

Directions
  1. Combine ingredients in a large pot.
  2. Simmer on medium low for an hour, or until carrots are soft and the sauce has thickened.
