How to make it

  • Drain beans and rinse
  • Puree in blender along with other wet ingrdients
  • Whisk dry ingredients
  • Add to blender and blend smooth,
  • Grease a deep 9 inch round cake pan and dust with baking cocoa.
  • Pour in batter ( will be thin ), you will think it wont get firm but it does!!!
  • Bake in a preheated 350F oven until cake is set in center and tested done with toothpick, 50 mins or so
  • Cool 10 mins on rack
  • Remove and cool completely
  • Wrap in foil overnight for best flavor
  • I drizzed a chocolate ganache over the cooled cake
  • Note: for a taller cake, split baked cake in half and frost and fill
  • Also 2 tsp mint extract may be substituted for the vanilla for a chocolate mint cake
