Black Bean Flourless Chocolate Cake

- 1, 15 oz can black beans shopping list
- 5 large eggs shopping list
- 1 tbs vanilla shopping list
- 1/2 tsp salt shopping list
- 6 tbs melted butter, or extra virgin coconut oil or olive oil shopping list
- 3/4 cup sugar or 1 cup Splenda shopping list
- 6 tbs baking cocoa shopping list
- 1 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1 Tbs water shopping list
- Chococlate frost or drizzle as desired shopping list
How to make it
- Drain beans and rinse
- Puree in blender along with other wet ingrdients
- Whisk dry ingredients
- Add to blender and blend smooth,
- Grease a deep 9 inch round cake pan and dust with baking cocoa.
- Pour in batter ( will be thin ), you will think it wont get firm but it does!!!
- Bake in a preheated 350F oven until cake is set in center and tested done with toothpick, 50 mins or so
- Cool 10 mins on rack
- Remove and cool completely
- Wrap in foil overnight for best flavor
- I drizzed a chocolate ganache over the cooled cake
- Note: for a taller cake, split baked cake in half and frost and fill
- Also 2 tsp mint extract may be substituted for the vanilla for a chocolate mint cake
