Ingredients

  • Enough chicken to feed 4 to 5 people. Can use all one kind, (legs, breasts, wings) or you can use mixed pieces. shopping list
  • 1 and 1/2 cups of your favorite nectar. Can be peach or apricot nectar, orange juice or whatev er flavor you would like. shopping list
  • 1 TBS lemon zest shopping list
  • 1 TBS lemon juice shopping list
  • **1 TBS orange zest if you are using orange flavors. shopping list
  • 1/2 of a jar of a matching flavored preserves, marmalade or conserve, using sugar free is fine and healthier. shopping list
  • The other half of the preserves melted and thinned with a little juice to use for a basting sauce as chicken is cooking. shopping list

How to make it

  • Plaace chicken parts into a resealable plastic bag.
  • Add the nectar, zest, juice, and 1/2 jar of your favorite preserves, marmalade or conserve.
  • Seal bag and shake to coat all the chicken.
  • Let the chicken marinate for at least 4 to 6 hours. Overnight would be fine.
  • To begin to grill, remove chicken from bag and discard marinade.
  • Grill chicken over medium heat for about 5 minutes on each side or until each side had dark grill marks.
  • Continuing grilling over indirect heat 8 to 10 minutes or until chicken is cooked through and no longer pink on the inside. Test for 180*
  • As the chicken is gtrilling baste with the thinned preserves throughout the grilling process.
