How to make it

  • Combine the cheese and flour in a large bowl; set aside.
  • Melt the butter in a medium heavy saucepan over medium heat. Saute the shallots and garlic for 2 minutes. Pour in the cider. Simmer for 1 minute. Reduce the heat; discard the garlic. Add the cheese in handfuls. Gently stir after each addition until the cheese melts. Add the lemon juice, mustard, bacon and sun-dried tomatoes. Cook, stirring until fondue begins to bubble around the edge, 1 - 2 minutes, do not boil.
  • Pour into warmed fondu pot. Serve.
