Smoky Cheddar And Bacon Fondue

- 1 lb smoked or plain cheddar cheese, shredded shopping list
- 1 slightly rounded tablespoon all-purpose flour shopping list
- 2 shallots or 1 small onion, minced shopping list
- 1 large clove garlic, finely minced shopping list
- 1 cup hard cider, lager beer or sparkling cider shopping list
- 1 tsp fresh lemon juice shopping list
- 1-2 tsp grainy mustard, or to taste shopping list
- 6 slices premium bacon, cooked crispy, chopped shopping list
- 1/4 cup minced. re-hydrated sun-dried tomatoes shopping list
How to make it
- Combine the cheese and flour in a large bowl; set aside.
- Melt the butter in a medium heavy saucepan over medium heat. Saute the shallots and garlic for 2 minutes. Pour in the cider. Simmer for 1 minute. Reduce the heat; discard the garlic. Add the cheese in handfuls. Gently stir after each addition until the cheese melts. Add the lemon juice, mustard, bacon and sun-dried tomatoes. Cook, stirring until fondue begins to bubble around the edge, 1 - 2 minutes, do not boil.
- Pour into warmed fondu pot. Serve.
