Summer Squash-cheese Bake

- 3 med yellow squash, thinly sliced shopping list
- 6 T butter shopping list
- 1/2 lb spinach shopping list
- 3 med tomatoes, sliced shopping list
- 2 C cottage cheese shopping list
- 1 1/2 C crumbled crackers e.g. Ritz shopping list
- 1/4 t oregano shopping list
- 1/4 t parsley shopping list
- 1/4 t basil shopping list
- 1/4 t minced garlic shopping list
- 6 slices provolone shopping list
How to make it
- saute squash in 2 T butter, set aside
- tear spinach into pieces, saute in 2 T butter, set aside
- saute tomatoes in 2 T butter,, set aside
- mix cottage cheese, crackers, herbs in a small bowl
- put squash in a 2-qt casserole dish. Add 1/2 cheese mixture, all spinach, remaining cheese mix, then tomatoes.
- Top with provolone slices.
- Bake 375 degrees 30 min
