How to make it

  • Saute the onions, peppers and garlic in oil over medium heat until softened, about 5 minutes.
  • Stir in beans, broth, cumin, coriander and water and bring to a boil.
  • Reduce heat and simmer, covered, until the flavours are blended, about 45 minutes.
  • Remove from heat and stir in sherry/wine, lime juice and salt. Let the mixture cool slightly.
  • Using a food processor, blender or hand blender puree the soup.
  • Heat to serving temperature and serve with crushed baked tortilla chips on top.
