Black Bean Soup

- 4 teaspoons olive oil shopping list
- 2 onions, chopped shopping list
- 4 jalapeno peppers, seeded and chopped shopping list
- 4 tablespoons garlic, minced shopping list
- 2 15 oz cans black beans, drained and rinsed shopping list
- 1 quart fat free chicken broth shopping list
- 1 tablespoon cumin, ground shopping list
- 1 tablespoon coriander, ground shopping list
- 2 cups water shopping list
- 5 tablespoons dry sherry or dry red wine shopping list
- 2 tablespoons lime juice shopping list
- baked tortilla chips to garnish shopping list
How to make it
- Saute the onions, peppers and garlic in oil over medium heat until softened, about 5 minutes.
- Stir in beans, broth, cumin, coriander and water and bring to a boil.
- Reduce heat and simmer, covered, until the flavours are blended, about 45 minutes.
- Remove from heat and stir in sherry/wine, lime juice and salt. Let the mixture cool slightly.
- Using a food processor, blender or hand blender puree the soup.
- Heat to serving temperature and serve with crushed baked tortilla chips on top.
