How to make it

  • Preheat oven to 325°F. Stir together butter, sugar and coconut extract until light and fluffy. Stir in flour, 1 cup coconut and salt and mix well. Form into 24 balls around maraschino cherries or chocolate chunks and roll in remaining 1 cup coconut. Place on a lightly greased baking sheet. Bake for 18 to 20 minutes or until lightly browned. Let cool slightly, then place on baking racks to cool completely
