Buttermilk Roast

- 1 bottom beef round or boned pork shoulder roast, approx. 3lb shopping list
- vegetable salt shopping list
- 2Tbsp oil shopping list
- 2c buttermilk shopping list
- 1c water shopping list
- 2Tbsp apple cider vinegar shopping list
- 2lg onion, sliced shopping list
- 1/2 bay leaf shopping list
- 3 crushed peppercorns shopping list
- 6 carrots, quartered shopping list
- 6 sml white onions shopping list
- 2lg potatoes, quartered shopping list
How to make it
- Rub salt into meat. Brown meat in oil in Dutch oven.
- Add buttermilk, water, vinegar, sliced onion, bay leaf, & peppercorns. Bring to boil.
- Cover & let simmer very slowly till tender, 2-21/2 hr.
- Add potatoes, carrots & small onions.
- Season w salt & cook, covered, 20m.
- Serve gravy with meat, thickened with flour.
