How to make it

  • Preheat oven 350
  • Grease 9 x 13 baking dish with butter , layer potatoes evenly and salt and pepper to taste.
  • Bake for 20 mins or until golden. ( this can be done the night before cover and put in fridge until morning)
  • Scramble eggs and pour evenly on top of potatoes.
  • Sprinkle meat of choice evenly on top.
  • Sprinkle cheese on top of egg and meat
  • Bake for 30- 40 mins or until eggs are cooked
  • *** Note- A great addition to this is to saute onions and bell pepper and sprinkle along with the meat .
