How to make it

  • Preheat oven to 400 degrees. Grease 10-inch cast iron skillet with oil
  • In a large bowl, combine the flour, cornmeal, baking powder, salt, cumin, cinnamon, cayenne, and chives; mix well.
  • In another mixing bowl, cream the butter, and sugar until light and fluffy. Add the eggs, one at a time, blending well after each. Stir in the buttermilk. Fold in the dry ingredients in 3 batches, and then fold in the corn.
  • Pour batter into pan and bake until golden brown, about 30-40 minutes.
