How to make it

  • Combine the rice and ginger rounds in a large saucepan. Add broth and a dash of salt. Bring to a boil, stir; cover and reduce heat to low. Simmer until the rice is tender and the liquid has been absorbed.
  • Meanwhile, combine the cilantro, green onion and minced ginger in the work bowl of a mini food processor. Add the oils and the vinegar, process until almost smooth. Taste and season with salt and pepper.
  • When the rice is cooked, stir in the cilantro mixture. Serve.
