Ginger-cilantro Rice

- 1 cup long-grain rice shopping list
- 2 (1 inch pieces) fresh ginger, cut into 1/4 inch slices plus 1 teaspoon minced shopping list
- 1 3/4 cup low-sodium chicken broth shopping list
- 1 1/3 cups chopped fresh cilantro shopping list
- 1 green onion, thinly sliced shopping list
- 2 tablespoons extra-virgin or grapeseed oil shopping list
- 1 teaspoon sesame oil shopping list
- 1 teaspoon unseasoned rice vinegar (or to taste) shopping list
How to make it
- Combine the rice and ginger rounds in a large saucepan. Add broth and a dash of salt. Bring to a boil, stir; cover and reduce heat to low. Simmer until the rice is tender and the liquid has been absorbed.
- Meanwhile, combine the cilantro, green onion and minced ginger in the work bowl of a mini food processor. Add the oils and the vinegar, process until almost smooth. Taste and season with salt and pepper.
- When the rice is cooked, stir in the cilantro mixture. Serve.
