Parmesan Crusted Veggie Sandwiches

- 1/4 cup butter shopping list
- 1/4 cup parmesan cheese shopping list
- salt & pepper to taste shopping list
- Mayo shopping list
- Dijon mustard shopping list
- 1 avocado, sliced shopping list
- tomato, sliced shopping list
- red onion, sliced thinly shopping list
- alfalfa sprouts (a small pkg will make a few sandwiches) shopping list
- 1 loaf fresh baked bread, sliced shopping list
How to make it
- heat a skillet on medium heat.
- in a bowl, soften butter and mix in parmesan, salt and pepper.
- spread butter/parm mixture on one side of bread slice and place in skillet, butter side down and cook until crispy. set aside to cool when done.
- while waiting for bread to cook and cool, slice up the avocado, tomato and red onion.
- when bread cools spread mayo and mustard on un-buttered side of bread and top with the sliced veggies and some alfalfa sprouts.
- can be topped with another slice of bread or left open-faced....delish both ways! great with a dab of ranch too!
