Cucumber Gazpacho

Again a great use of excess cukes from the garden! This is simple, delcious and refreshing. One may increase recipe as desired. Adding the avocado is optional A lovely pale green soup!
Ingredients
- 2 large cucumbers, peeled and seeded and chopped shopping list
- juice from a large lime shopping list
- small bunch of basil shopping list
- Greek yoghurt or sour cream shopping list
- salt and pepper to taste shopping list
How to make it
- Blend all high speed except
- yoghurt to puree
- Add yoghurt or sour cream and blend well
- season to taste
- Chill well
- Note: an addition of 1 ripe avocado may be added
