Bilberry/Blueberry Topping For Cheesecake

Made this topping to add to a favorite cheesecake recipe which is already in my recipes list. That particular dessert is a speedy cheesecake pie. Since I hadn't made it before didn't know there wouldn't be enough to cover the dessert completely so if you make the topping increase the amounts slightly. Read more When I made it the topping covered about 2/3 of the pie. The combination of the bilberries and the cheesecake were sublime. See less
Ingredients
- 2 tbsp. sugar shopping list
- 2 tsp. cornstarch shopping list
- 1/4 c. water shopping list
- 1 c. blueberries shopping list
- 1 tbsp. lemon juice shopping list
How to make it
- In small saucepan, mix sugar, cornstarch, water, and lemon juice.
- Cook and stir until thickened.
- Add blueberries; cook until bubbly.
- Chill. Spread on top of cheesecake and refrigerate.
