Summer Lemon Crinkle Cookies

- 2 1/2 cups all-purpose flour shopping list
- 1 teaspoon cornstarch shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 3/4 cup unsalted butter (room temperature) shopping list
- 1 cup & 2 Tablespoons granulated sugar shopping list
- 1 large egg (room temperature) shopping list
- 1/4 cup fresh lemon juice shopping list
- 1 Tablespoon lemon zest (about 1-2 lemons) shopping list
- 1 teaspoon vanilla extract shopping list
How to make it
In medium bowl
- Whisk together the flour, cornstarch, baking soda, and salt (set aside).
In mixing bowl
- Using paddle attachment, beat sugar, egg, lemon juice, lemon zest, and vanilla (about 1 minute). (Mixture may appear curdled, it’s okay). Scrape down, add flour mixture. Line medium bowl with plastic wrap, place dough in bowl and wrap tightly with plastic wrap. Chill 3 hours.
Prepare cookies
- Preheat oven to 350 degrees. In two separate small bowls, add 1/4 cup granulated sugar in one bowl, and 1 cup confectioners sugar in the other. Roll dough into 1 - 1 1/2 inch balls. Set aside. Line cookie sheets with parchment paper, roll each ball in granulated sugar, then roll in confectioners sugar. Place 12 on lined cookie sheet leaving evenly spaced apart. Bake 12 minutes, allow to cool before removing to cookie rack to cool completely. Enjoy!
