Plum Vanilla Preserves

- 1-1/2 lbs. firm-ripe plums,cut in 1" pieces(with skin) shopping list
- 2-1/4 c sugar shopping list
- 2 vanilla beans,split lengthwise and haved crosswise shopping list
- 4 small cinnamon sticks shopping list
- 1 lemin shopping list
- 1-1/2 lbs firm-ripe plumcots or apricots,cut in 1" pieces (skin on) shopping list
How to make it
- Put plums ,sugar,vanilla beans and cinnamon sticks in large,wide saucepan. Squeeze lemon juice through a strainer into the pan. Cover over med-high heat,stirring occasionally,until sugar dissolves and mixture boils,about 10 mins
- Reduce heat to medium and continue to cook,stirring occasionally,until candy thermometer reaches 220' about 30 mins.(To be sure that mixture has reached gel point ,spoon some onto cjhilled plate and put in freezer until cool.Liqud should set. If not,continue to cook and retest after a few mins more) Remove pan from heat and let cool 30 mins.
- Meanwhile sterilize 4 8oz. canning jars and lids.
- Return plum mixture to med-high heat . Bring to boil,stirring ,then add plumcots or apricots. Reduce heat to med. and simmer until the apricots are tender,about 5 mins. Discard cinnamon sticks.
- Fill the jars with plum mixture,leaving 1/2" headspace,then seal and process.let cool 30 mins.
