Chocolate Zucchini Cake

- CAKE: shopping list
- 1/2 cup room temperature butter shopping list
- 1/2 cup apple sauce shopping list
- 1 1/4 cups sugar shopping list
- 2 eggs shopping list
- 1 tsp vanilla shopping list
- 1/2 cup sour milk (add a little lemon or vinegar to regular milk) shopping list
- 2 1/2 cups flour shopping list
- 4 tbsp cocoa shopping list
- 1 tsp cinnamon shopping list
- 1/2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp cloves (optional) shopping list
- 2 heaping cups grated zucchini shopping list
- ICING: shopping list
- 1 cup room temperature butter shopping list
- 1 tsp vanilla shopping list
- 1/2 tsp cinnamon shopping list
- splash of milk shopping list
- *1/4 - 1/3 cup cocoa shopping list
- *add icing sugar until you reach the desired thickness, 3-5 cups. shopping list
How to make it
- Preheat the oven to 325 degrees Celsius
- Beat together butter and sugar
- Add apple sauce, eggs, vanilla, and milk. Mix
- In a separate bowl combine flour, cocoa, cinnamon, baking powder, baking soda, cloves.
- Slowly add dry ingredients to wet ingredients. Mix until just combined.
- Stir in zucchini. It will look like a lot of zucchini.
- Transfer to a greased 4 QT baking disk (a lasagna pan)
- Bake for 45 minutes or until a toothpick inserted into the middle comes out clean.
- Let cool and top with icing.

- *I apologize for the imprecise measurements. I always make icing this way. Add icing sugar until the icing appears to be more solid. Start with 1/4 cup cocoa and add more until you reach the colour and taste you like. Just taste the icing, you'll know you have it right when you want to keep on eating it!
