Apricot Bars

- 3/4 cup butter, softened shopping list
- 1 cup sugar shopping list
- 1 egg shopping list
- 1/2 tsp vanilla shopping list
- 2 cups flour shopping list
- 1/4 tsp baking powder shopping list
- 1 1/3 cups flaked coconut shopping list
- 1/2 cup chopped walnuts shopping list
- 1 jar (10 to 12 oz.) apricot preserves shopping list
How to make it
- In a large mixing bowl, cream the butter and the sugar
- Add the egg and vanilla
- Mix well
- Combine the flour and baking powder
- Gradually add to the creamed mixture
- Fold in the coconut and the walnuts
- Press two-thirds of the dough into a greased 13 x 9 inch baking pan.
- Spread with the preserves
- Crumble the remaining dough over the preserves
- Bake at 350 F for 30-35 minutes or until golden brown
- Cool in the pan on a wire rack
- Cut into bars
