How to make it

  • In a large mixing bowl, cream the butter and the sugar
  • Add the egg and vanilla
  • Mix well
  • Combine the flour and baking powder
  • Gradually add to the creamed mixture
  • Fold in the coconut and the walnuts
  • Press two-thirds of the dough into a greased 13 x 9 inch baking pan.
  • Spread with the preserves
  • Crumble the remaining dough over the preserves
  • Bake at 350 F for 30-35 minutes or until golden brown
  • Cool in the pan on a wire rack
  • Cut into bars
